- Juice of 2 limes
- 1/3 cup chopped coriander
- 1 clove garlic, crushed
- 1/3 cup olive oil
- 4 T sherry vinegar
- 200 g runner beans
- Sea salt

Combine the lime juice, coriander, garlic, olive oil and sherry vinegar and crush using a pestle and mortar.
Blanch the runner beans in a saucepan of rapidly boiling water, drain and serve warm with a sprinkling of sea salt and a good drizzle of garlicky sherry-vinegar dressing.
