- 4 free range egg
- 2 T cream
- 1 T butter
- 50 g smoked salmon
- 1 small handful feta
- Parsley, for garnish
Whisk eggs and cream together until fluffy.
Heat the butter in a frying pan, pour in the egg mixture to cover the base of the pan.
When the sides have set, place smoked salmon and feta cheese on one side of the omelette and season with salt and pepper.
Fold over the other side of the omelette.
Garnish with parsley and serve.
