Salmon Coconut Flour Scone

Ingredients
- 1/3 cup Coconut Flour, sifted
- 1/4 cup oil (I used sunflower, but sure olive/canola is fine)
- 4 large eggs, beaten
- 230 g container Salmon Cream Cheese
- 1/4 teaspoon baking powder
- 3 teaspoons coarse black pepper
- 1/2 teaspoon salt
- 1/4 cup fresh parsley, finely chopped
Cooking Instructions
In food processor / blender, add the sifted coconut flour, baking powder, salt and pepper. Add the eggs, oil, Salmon cream cheese and parsley. Blend till smooth. Let rest in blender for 15 minutes. (or just mix everything nicely in a bowl.)
Drop batter by the spoonful onto a greased cookie sheet (or spoon into greased foil cupcake holders). Bake at 200 oC for about 20 minutes or till test pin comes out clean.
