- 1 cup Quick Cook Samp
- 2 cups cold tap water
- 1 onion, chopped
- 2-3 eggs, hard boiled, sliced
- 1-2 cups mayonnaise
- 1 cup tinned peaches, cubed
- 2-3 tablespoons curry powder (whichever you prefer)
- salt & pepper to taste
Put 1 cup raw Samp in pot with 2 cups cold tap water. Let it come to a boil. Reduce the heat, put the lid on but leave an opening and simmer for about 20 minutes, till Samp is soft - NOT MUSHY.
Mix the Samp with onion, eggs, mayonnaise (enough mayo, don't be stingy), curry powder, peach cubes and season to taste. Chill. Serve.
