Samp pizza bread
Ingredients
- 2 cups Samp, cooked and drained*
- 4 eggs, large
- 1 cup ham/salami/viennas
- 2 cups cheese, grated
- herbs & spices, to taste
- salt & pepper to taste
Cooking Instructions
*There is now a 'Quick Cook Samp' in shops. From start to finish it cooks in 30 minutes. No soaking at all.
Preheat oven to 200 oC.
In mixing bowl, add the Samp, ham/salami/viennas, cheese, herbs & spices, salt & pepper. Taste - adjust seasoning. Then add the eggs - mix everything well together.
Spoon into a really well greased Bundt pan (mine stuck a bit …maybe put baking paper on bottom? Also I’m sure it can be done in a square baking tin?)
Important! Press the mixture with back of spoon down in your pan – do it gentle, but it must be pressed well.
Bake for 30 minutes. Use as main dish – side dish or with a braai.
So so not eccentric. We played around with samp, vienas and tinned ham 30 years ago. I’m sure you’ve got something new age eccentric up your sleeve Alma!
