Ingredients

Method
  • 2 onions, sliced
  • 3 T garlic, crushed
  • ¼ cup olive oil
  • 2 T fish masala
  • 2 t ground turmeric
  • 2 t red chilli powder
  • 2 cloves
  • 4 whole allspice
  • 1 kg Woolworths freshly frozen seafood mix
  • 2 T butter
  • 1 kg Woolworths freshly frozen uncooked shell-on large prawns, deveined and rinsed
  • 525 g rice, cooked
  • coriander, to garnish

1. Preheat the oven to 180°C. Braise the onions and 1 T garlic in the olive oil, half the fish masala, turmeric, chilli, cloves and allspice, then set aside.

2. In a separate pan, braise the seafood mix, 1 T garlic and spices in 90 g butter, then set aside.

3. Fry the prawns in the remaining garlic and butter for 2–3 minutes and set aside (they should not be fully cooked as the cooking process will be completed in the final step).

4. In a large saucepan, layer each element as follows: half the rice, onions, seafood mix and prawns. Cover with. the remaining rice, dot with butter and cover the saucepan with foil.

5. Place in the oven for 45 minutes, then serve immediately garnished with fresh coriander.
