Slow-roasted strawberries

These easy slow-roast strawberries make a delicious pudding on their own, with cream and crushed meringues. This recipe is also a great way to use up berries about to go bad.

- 2 x 600 g Sabrosa strawberries
- 125 g vanilla sugar

1. Preheat the oven to 120°C. Remove the leaves from the strawberries, but leave the stems intact. Place in a single layer on a baking tray and sprinkle with sugar.
2. Place in the oven and slow roast. Do not turn while cooking. After 3 hours, remove, cool and place in a container. Present as a gift accompanied by a Christmas pudding.
3. The berries can be served on their own or with ice cream, yoghurt or fresh cream, or scones and crème fraîche.
