  • 2 red onions
  • 2 white onions
  • 2 bulbs garlic
  • 4 T olive oil
  • 6 sprigs thyme
  • 2 T Demerara sugar
  • 1 cup verjuice
  • salt, to taste

Cooking Instructions

Preheat the oven to 180°C. Halve the onions and garlic bulbs horizontally.

Place them on a large baking tray and coat with the olive oil. Add the thyme, scatter over the sugar and pour over the verjuice and season.

Roast for 45 minutes to 1 hour, turning often and adding extra verjuice if necessary, until the onions and garlic are cooked through and slightly charred.
