- 2 red onions
- 2 white onions
- 2 bulbs garlic
- 4 T olive oil
- 6 sprigs thyme
- 2 T Demerara sugar
- 1 cup verjuice
- salt, to taste

Preheat the oven to 180ºC. Halve the onions and garlic bulbs horizontally.
Place them on a large baking tray and coat with the olive oil. Add the thyme, scatter over the sugar and pour over the verjuice and season.
Roast for 45 minutes to 1 hour, turning often and adding extra verjuice if necessary, until the onions and garlic are cooked through and slightly charred.
