This easy one-pot chicken bake is surprisingly affordable to make. The chicken cooks atop wedges of juicy apple and cabbage, and honey, mustard and cumin add sweetness and spice.


  • ¾ cup olive oil  
  • 2 T mustard 
  • 2 T honey 
  • 3 cloves garlic, crushed
  • 2 t cumin seeds 
  • sea salt and freshly ground black pepper, to taste 
  • 1 cabbage, cut into wedges 
  • 2 onions, cut into wedges 
  • 2 apples, cut into wedges  
  • 1 whole chicken, spatchcocked 
  • 2 t Woolworths roast chicken seasoning 
  • parsley, chopped, for serving 

Cooking Instructions

1. Preheat the oven to 180ºC. Mix half the olive oil, mustard, honey, garlic and cumin seeds in a jar and shake well. Season to taste.

2. Arrange the cabbage, onions and apples on a large baking tray. Pour over the dressing, making sure everything is well coated.

3. Rub the chicken with the remaining olive oil and sprinkle over the chicken seasoning.

4. Place the chicken on top of the wedges and bake for 1 hour, or until cooked through. Garnish with parsley.
