- 550 g flank steak
- 2 T steak rub
- 2 T olive oil
- 4 mielies
- 8 sundried tomatoes
- 1 chilli, chopped
- 1/2 cup cherry tomatoes, torn
- 1 avocado, chopped into chunks
- 1/4 cup coriander, chopped
- 1 papaya, sliced
- 1 lemon, juice
Rub the flank steak with the steak rub and olive oil and set aside.
Steam the mielies, slice off the kernels and toss with the sundried tomatoes, chopped chilli, torn cherry tomatoes, ripe avocado, chopped coriander, fresh papaya, and season. Dress with the lemon juice and set aside.
In a pan over a high heat, fry the steak for 4 minutes on each side, remove and rest.
Slice and serve with the corn and avocado salsa.
