Ingredients

  • 3 cups, firmly packed baby spinach leaves, fresh
  • 2 eggs, x-large
  • boiling water, to cover spinach
  • 1/4 cup cottage cheese, chunky
  • 1/2 cup cheddar cheese, grated
  • 1/4 cup Parmesan cheese powder
  • salt and pepper

Cooking Instructions

Preheat oven to 180 oC. Grease a 6 hole muffin pan (big muffins). Pour boiling water over the spinach leaves. Leave for a few minutes and drain well. Pat the spinach dry.

Mix the spinach with the cottage cheese, Cheddar cheese and Parmesan cheese. Season. Pour the mixture into the muffin pan.

Beat the eggs and milk together and pour over the mixture. Bake for 25 minutes, or till centers are set.

Perfect as a main course, side course or a snack.
