Steamed butternut bread

Ingredients

  • herbed butter
  • 1 cup Woolworths butternut mash
  • handful parsley
  • ¼ cup sugar
  • handful basil
  • 2 t salt
  • handful chives
  • 115 g butter
  • salt, to taste
  • 2 eggs
  • 2 t instant yeast
  • ¾ cup water or milk, lukewarm
  • 4 cup white bread flour
  • herbed butter

1. To make the dough, put all the ingredients (except the extra melted butter) into a large bowl and mix by hand or with a mixer until a soft, smooth and elastic dough forms. If you’re mixing by hand this could take up to 10 minutes, in a mixer it takes around 4-5 minutes.

2. Place the dough in a clean bowl, cover with a damp cloth and leave to rise in a warm place until doubled in size, about 90 minutes.

3. Once risen, knock the dough down and shape it into a round. Place in a greased bowl that fits into a pot for steaming, allow to rise for 15 minutes. Once risen place inside a pot that has been filled with water (about 5cm deep). Cover with lid and steam for 20 minutes.

4. Test if it’s done by using a testing stick into the dough - if it comes out clean then it’s ready.

5. For the butter chop all the herbs roughly, combine with the butter and seasoning. Serve the steamed bread with the herby butter and soup of choice.
