  • 500 g queen-size prawns, shelled and de-veined
  • 1 red onion, peeled and sliced
  • 1/2 cucumber, seeded and roughly chopped
  • 1 red chili, seeded and finely chopped
  • 1 bunch frisee lettuce
  • 1/2 bunch radicchio leaves, roughly torn
  • Coarse sea salt and freshly ground black pepper, to taste
  • For the dressing:
  • 2 T honey
  • 1 t Djion mustard
  • 1 T lemon juice
  • 1 T lemon juice
  • 3 T canola oil
  • 2 T pouring cream

Cooking Instructions

Steam the prawns for 5 minutes until they are bright pink and opaque. Assemble the rest of the salad ingredients on a serving platter and top with the prawns. Pour over the dressing and serve immediately.

To make the dressing:
Stir the honey, mustard and lemon juice together in a pouring jug. Slowly add the oil, whisking all the while, to form an emulsion. Add the cream and combine.
