Ingredients

  • 3 T olive oil
  • 1 onion, finely chopped
  • 4 cloves garlic, crushed
  • 4 sprigs thyme
  • 1 x 400 g can, diced tomatoes
  • 1 cup tomato purée
  • 1 T Woolworths soffritto
  • 1⁄2 cup white wine (or fish stock or water)
  • 700 g Woolworths frozen mussels
  • 6 Woolworths hake medallions
  • 300 g Woolworths frozen prawns
  • 1 T fish sauce
  • sea salt and freshly ground black pepper, to taste
  • cheesy polenta, for serving

Cooking Instructions

1. Heat the oil in a large frying pan. Cook the onion over a low heat until soft. Add the garlic and thyme and cook for 1 minute. Add the tomatoes, tomato purée and soffritto and cook for 10 minutes.

2. Add the wine, mussels and hake, cover and cook for 10 minutes. Add the prawns, fish sauce and seasoning. Cook for 1 minute.

3. Serve with the cheesy polenta.
