- 3 large sweet potatoes, thinly sliced
- Sea salt and freshly ground black pepper, to taste
- 2 garlic cloves, finely chopped
- 2 shallots, finely chopped
- 50 g butter
- 125 ml cream
- 50 g Parmesan, grated
Preheat the oven to 180°C.
Layer the sweet potato in a circle on an ovenproof plate or baking tray. Season each layer with salt and pepper, garlic, shallots, pieces of butter and a drizzle of cream.
Once all the sweet potato has been layered and seasoned, sprinkle over the Parmesan.
Bake for 25 minutes, or until the sweet potato is cooked and the cheese is melted and golden.
