  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 1/2 cups milk
  • 1/2 cup oil
  • 1 cup tinned sweetcorn
  • 1 teaspoon ground black pepper
  • 2 teaspoons cayenne pepper (optional)

Cooking Instructions

Preheat oven to 190 oC. Grease a 12 big muffin pan and dust with flour.
In a large bowl, stir together the flour, baking powder, black pepper, cayenne pepper (if using) and salt. Make a well in the center. In a small bowl beat eggs, sweetcorn, milk and oil together. Hallo Alma – I like the sound of these muffins but would like to know whether the sweet corn is creamed or whole kernels?

You’d have to double check with recipe author, but we think whole kernels would work best here.
