- 2 cups all purpose flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 2 large eggs
- 1 1/2 cups milk
- 1/2 cup oil
- 1 cup tinned sweetcorn
- 1 teaspoon ground black pepper
- 2 teaspoons cayenne pepper (optional)
- 2 teaspoons dried mixed herbs
Preheat oven to 190 oC. Grease a 12 big muffin pan and dust with flour.
In a large bowl, stir together the flour, baking powder, black pepper, cayenne pepper (if using) and salt. Make a well in the center. In a small bowl beat eggs, sweetcorn, milk and oil together. Pour all at once into the well in the flour mixture. Mix quickly and lightly until moistened, do not beat.
Pour the batter into big 12 muffin pan and bake for 20 minutes or until golden. Makes 12 big muffins.
Let it cool in muffin pan for about 10 minutes. Remove and enjoy.
