  • 250 g fillieted fresh salmon. cut into chunks
  • 5 ml crushed chillies
  • 30 ml tequila
  • 15 ml fresh lime juice
  • sea salt, to taste
  • for the watermelon salsa
  • 250 ml chopped watermelon
  • 15 ml fresh lime juice
  • 30 ml chopped, fresh coriander
  • 2 red salad onions, chopped
  • 2.5 ml chopeed fresh chillies
  • sea salt, to taste

Cooking Instructions

For the watermelon salsa, combine watermelon, fresh lime juice, chopped fresh coriander,  red salad onions, finely chopped, chopped fresh chilli and sea salt, to taste.

Sprinkle the salmon with chilli. Place in an ovenproof glass dish.

Spoon the tequila and lime juice over the salmon. Season lightly with salt.

Bake at 190°C for about 10 minutes until just cooked and still moist.

Remove the salmon from the oven and serve it with the watermelon salsa.
