- 8 rashers of wood-smoked streaky bacon
- Flour tortilla
- Goat's or feta cheese
- Spring onion, chopped
In a pan over a medium to high heat, fry the bacon until crisp and golden.
Arrange on a flour tortilla, together with slices of feta or goat's cheese and chopped spring onion.
Top with another flour tortilla, then toast in a hot pan or under a hot grill until molten and golden.
Slice into wedges, season to taste and serve immediately.
