Tomato Coconut Milk Pasta

Ingredients
- 50 grams Tomato paste
- 400 grams Coconut milk, full fat
- 2 cups Meat / Chicken / Fish, cubed
- Spices, to taste
- 2 Tomatoes, finely chopped
- Pasta, cooked, drained
- 1 cup Mixture of fresh vegetables, chopped (cabbage, mushrooms, green beans)
Cooking Instructions
Steam your pasta. Drain and keep aside. Fry the meat and veggies in oil (or just veggies if you want), add spices to your taste. Stir for a few minutes. Mix the tomato paste with coconut milk, add to the dish. Add the tomatoes. Put lid on and simmer. Taste and adjust seasoning to your taste. Serve with pasta.
