  • 1 x 350 g punnet Woolworths exotic tomatoes, sliced
  • 200 g Woolworths vine tomatoes
  • 2 Israeli tomatoes, cut into wedges
  • 3 Woolworths Flavourburst white-flesh nectarines, sliced
  • 3 Woolworths Flavourburst yellow-flesh nectarines, sliced
  • 2 T red wine vinegar
  • 3 T olive oil
  • Sea salt and freshly ground black pepper, to taste
  • 1 ball fresh mozzarella, torn
  • Fresh basil, for serving

Cooking Instructions

Toss all the ingredients except the basil. Marinate at room temperature for half an hour. Toss again, then top with the basil.
