  • 4 plums
  • 400 g frozen summer berries, thawed
  • 440 g caster sugar
  • 1 vanilla pod, split
  • Stone fruit, sliced, for serving
  • 2 litres lemonade or soda water
  • 10 g fresh mint

Cooking Instructions

Place the plums and berries into a saucepan with 1⁄2 cup water, bring to a simmer, then add the sugar and vanilla seeds. Stir until the sugar has dissolved, then simmer for 5–10 minutes, or until syrupy and reduced.

Remove from the heat and strain into a bowl. Allow to cool, then pour into a sterilised bottle.

When ready to serve, slice the stone fruit and place into a pitcher. Fill with crushed ice, lemonade, mint and 1–2 T of the cordial.
