Ingredients

  • 125 g icing sugar, plus extra for dusting
  • 125 g flour
  • 80 g butter, melted
  • 2 t vanilla extract
  • 3 free-range egg whites
  • Cups of creamy coffee, for serving

Cooking Instructions

Preheat the oven to 180°C.

Combine all the ingredients, bar the coffee, in a mixing bowl and whisk together until smooth and thick. Add a teaspoon of the mixture to a silpad or baking tray lined with greaseproof paper. Spread the mixture to create a long thin strip.

Repeat with the remaining mixture, then bake for 8 to 10 minutes, or until golden and almost crisp. Quickly peel the wafers from the silpad or baking tray and weave between the handles of three wooden spoons to create a wavy effect. Dust with icing sugar and serve with cups of creamy coffee.

Cook’s note: In place of vanilla extract, flavour these wafer-thin delights with rose-water, orange liqueur or cocoa powder.
