  • 8 slices black seedless watermelon
  • 2 x 80 g punnet pomegranate rubies
  • tequila, to drizzle
  • 1 tub lemon sorbet

Cooking Instructions

Cut out 4 large rounds from 4 slices of watermelon. With the other 4 slices, cut out 4 medium-sized rounds and 4 small rounds.
Pile up the watermelon discs, with lemon sorbet in between, and scatter over the pomegranate rubies. Drizzle with tequila.

Cook’s tip:
Use white rum or vodka instead of tequila if preferred.
