- 70 g prosciutto
- 500 g frozen dried shrimp, rehydrated - available at Asian supermarkets
- 120 ml vegetable oil
- 1 garlic head, peeled
- 60 ml fresh ginger, peeled and chopped
- 1 t dried chilli flakes
- Salt, a pinch
- Sugar, a pinch
Finely chop the prosciutto and fry in the vegetable oil until crispy for about 3 minutes over a medium heat.
Pulse the remaining ingredients until fine in consistency and add to the fried prosciutto.
Cook for a further 15 minutes until beautifully fragrant and rich in colour. Remove from the heat and leave aside to cool. Pour over more vegetable oil if necessary and keep chilled.
