The spicy hot toddy to rule them all
Fight the winter chill – and get a little happy at the same time.
It’s the spicy hot drink we know and love, typically made using hot water, honey, spices and that iconic hit of liquor to round it off.
Start by picking your spices: ginger is a must, but feel free to add whole cloves, star anise and/or cinnamon for an extra hit. Add a hit of honey and a generous squeeze of lemon. If you opt to use whole slices, monitor the taste while steeping. The rind, left in boiling water too long, can impart a bitter taste.
Finally, pick your poison: whisky, rum or brandy will do.
Pro tip: If you’re not a fan of bits floating in your mug, use a French press to brew your hot toddy.

Heat 1 cup water, 1 cinnamon stick, 4 star anise, 3 whole cloves, 1 x 1 cm piece ginger and 1 strip lemon peel in a small saucepan over a medium heat. Warm a heatproof glass, then pour the whisky into the glass. Once the water starts bubbling and is infused with the spices, strain it to remove the spices and peel and pour it into the glass of whisky. Add ½ T honey and 1 T lemon juice.
Cook’s note: For a flavour twist try your favourite herbal tea instead of water.
