The only marinade recipe you’ll ever need

By Abigail Donnelly, 8 March 2016

TASTE’s food editor Abigail Donnelly uses Ziploc bags for just about everything – especially marinade. This week she shares her favourite marinade recipe that goes well with almost any dish

I love Ziploc bags and always ask my friends to bring them back for me when they go overseas – there are always ones with different patterns and colours. I basically Ziploc everything, even my sons’ Lego pieces! But I especially love marinating meat in them. I find you can push all the air out and the juice surrounds all the meat not like it would if lying in the marinade in a dish. It also makes it easier to turn and shake.

Here’s my favourite marinade recipe, you can soak just about anything in it!

olive oil 4 T
brown sugar or honey 2 T
Worcester sauce 4 T
lemon or orange juice 2 T
garlic 4 cloves, chopped
rosemary 2 sprigs, chopped
smoked paprika 1 t

Place all ingredients in a large Ziploc bag and add the meat. Seal and leave to marinate in the fridge for an hour. You can turn and shake it a few times while it is marinating.
