Watch: burgers and frittatas like you've never seen them before!

Prepare for an umami tsunami!


Epic mushroom and halloumi burger

Heat a griddle pan over high heat. Rub 4 brown mushroom steaks with olive oil and garlic. Fry the mushrooms top side down until griddle marks form. Flip and repeat. If you’d prefer your mushrooms ‘well done’, finish them off in a preheated oven.

Heat a non stick pan over medium to high heat, and fry 4 medium fat haloumi cheese slices until golden on each side.

Using a brown mushroom as a bun, assemble your burger layer by layer with baby gem lettuce, sliced tomato, basil pesto, and caramelised onions. Season with salt and pepper to taste. Serves 2.

Easy exotic mushroom frittata

Preheat oven to 200°C.

Heat 1T olive oil and 1T butter in a non-stick cast iron pan over medium to high heat. Fry 300g exotic mushrooms until golden.
Add 2 cloves of garlic, finely chopped, and 2 sprigs of thyme. Continue cooking for a minute.

Whisk 4 eggs in a bowl, season with salt and pepper to taste, and pour into the pan of golden mushrooms.

Place the pan into the preheated oven for 10 – 15 minutes, or until set and golden
