Hi Rezet,
Kate's umami paste is called No.5 (as in the 5th taste), and she got it on a trip to London. It's a paste made from anchovies, porcini mushrooms, Parmesan... all ingredients that add that deeply savoury "umami" flavour to dishes, so just a little adds a big savoury hit. Unfortunately Woolies doesn't stock it, but you may be able to get it (or something similar) from a specialist deli in your area.

Yes, exactly. I have a collection of over 120 cookbooks and have probably only ever made 2 or 3 dishes out of any one book. TASTE deserves better.

Well done on your resolution and commitment so far! More often than not one buy magazines to try out recipes and never get around to actually doing it. I am going to love reading about your adventures, especially when using substitutes. Good luck for the rest of the year!
