The humble potato salad is getting a makeover with Woolies’ new potato varieties – trust us, they deserve a place at your next braai. The smaller Nicola potato is perfect for boiling, roasting and salads, while the new Apache potato is more floury, and best roasted, mashed or fried. This is not your gran’s potato salad, it’s out with the heavy mayo and in with punchy dressings, crispy toppings and bundles of fresh herbs. Make your next potato salad your best one yet.
1 Boil 750 g Nicola potatoes until tender, then drain and set aside. For a creamy coconut dressing, combine 1 cup coconut cream with 1 cup plain yoghurt and 1 T olive oil. Season to taste. Drizzle over the potatoes and garnish with fresh coriander and sliced spring onions.
2 For a delicious roasted potato salad, halve 700 g Apache potatoes. Drizzle with olive oil, season and roast at 180°C for 1 hour, or until golden and tender. Sprinkle with fresh parsley and crispy fried bacon. Mix 300 g crème fraîche with 3 T horseradish and serve with the potatoes.
