3 moreish muffins that explode with flavour

Forget mom’s muffins. Clement Pedro has some clever new ways with these favourites – from a pizza muffin stuffed with mozzarella and sundried tomatoes, to mac ‘n’ cheese muffins. You’ll never look at muffins the same way again.

How sweet are those childhood memories of your mother baking delicious, fluffy muffins, filling your home with that unforgettable, just baked aroma?

Forget all that because I’m not taking about your mama’s muffins when I say muffins are about to get beastly!

I’m taking about cramming so many flavours into your favourite bake that your taste buds won’t know how to deal with them. I’m talking about getting all that sweet goodness and savoury mouthwatering righteousness into one underrated muffin.

The pizza muffin
It’s all about texture with this one. Cube mozzarella and add it to a savoury muffin mix with torn basil, roughly chopped sundried tomatoes, garlic and a few chunks of chorizo. Spoon into a muffin pan, then top with freshly grated Grana Padano and bake until cooked through. And what’s a pizza without a crispy crust? Well, the Grana Padano melts while cooking before crisping up to become just like a pizza crust.
Cook’s note: No time to prepare a muffin mix for this one? Buy pizza dough from your favourite pizzeria and use that as the base for your pizza muffins.

Mac’n’cheese muffins
Okay, okay, this isn’t quite a muffin… but it’s muffin shaped so it looks like one. And it’s delicious!

Prepare a classic mac’n’cheese mixture. Grease a muffin tray, then line it with breadcrumbs. Add a large amount of crispy bacon to your mac’n’cheese mixture, then spoon into the muffin pan. Add a few splashes of your favourite hot sauce and crumble over any cheese that your heart desires. Bake until golden, bubbly and delicious.

What makes this recipe even better is the fact that these mac’n’cheese muffins can be frozen and simply popped into the oven to reheat.

Apple-pie muffins
These are beyond addictive! Prepare a vanilla muffin mixture, then
peel and core a few apples, place them in a bowl with a little water and cover with clingwrap. Microwave for a few minutes to soften.

Allow the apple to cool slightly, then cut into chunks and add to the muffin mixture with ground cinnamon and 1 mashed banana (the banana seems to add to the apple pie effect). Spoon the mixture into a greased muffin pan, top with a crumble mixture made by rubbing flour, butter and brown sugar together with chopped pecans until the mixture resembles large breadcrumbs. Place in the oven to bake until your whole house smells like an apple pie factory.

These muffin hacks are awesome timesavers and truly taste amazing. They can be frozen and reheated whenever you get that muffin craving.
