1 hot milk, 4 ways
Nothing says solace like a mug of warm milk (laced with your favourite “extra” spice) to warm your hands and take you back to nursery dreams.
Milking it
Gently warm 2 cups of milk in a saucepan over low to medium heat until it starts to bubble, then spice it up with one of these ideas.
Turmeric latte
Add 1-2 t ground turmeric, the zest of 1 lemon, a pinch of salt, a pinch of cinnamon and 1-2 T honey to 4 cups of warm sweetened almond milk. Bring to slow simmer and adjust the flavours to taste. Simmer over a low heat fro 10 minutes but do not allow the mixture to boil. Divide between 4-6 small glasses. Top with whipped cream and a sprinkle of turmeric if you like.
Cook's note: Use cow's milk instead of almond milk if you prefer. Serves 4-6
DIY chai
Heat 4 cups of milk in a saucepan, then add 1/2 t white pepper, 2 cinnamon sticks, 5 smashed cardamom pods, 1 split vanilla pod and seeds, 2 cloves, 1 star anise and brown sugar to taste. Simmer over a low heat for 10 minutes to infuse but do not allow the mixture to boil. Strain and divide the milk between 4 glasses. Top with toasted marshmallows and serve immediately. Serves 4
Salted caramel hot chocolate
Heat 4 cups of milk in a saucepan, then add 80g chopped dark chocolate, 110g chopped milk chocolate and a pinch of salt. Once the chocolate has melted, remove from heat. Swirl 1 T Caramel Treat inside 4 glasses, then divide the hot chocolate between them. Top with chocolate shards. Serves 4
Vanilla milk with nut butter
Heat 4 cups of milk in a saucepan, then add 1 split vanilla pod and its seeds and 2 t of brown sugar. Simmer over low heat for 10 minutes but do not allow to boil. Swirl 1-2 t of your favourite nut butter into 4 glasses, then divide the strained milk between them. Serves 4
