Tropical fruit carpaccio

Take your average fruit salad up a notch with a tropical twist – perfect for these sweltering days (plus, you can close your eyes and imagine, albeit briefly, that you’re enjoying it on an exotic island). To make, slice 1 peeled and halved pineapple very thinly (a mandoline slicer works great for this). Dice the flesh of one mango into tiny cubes and scatter over the pineapple slices. Zest 3 limes and combine it with 3 tablespoons of sugar and a pinch of salt in a pestle and mortar. Sprinkle the lime sugar over the carpaccio to taste, along with toasted coconut chips and a squeeze of lime juice.

Make yours the avo toast with the most. Toast slices of your preferred bread in a pan with a little olive oil until golden brown and crispy, then top with slices of fresh avo and a savoury herb salsa. To make the salsa, combine 2 tablespoons of parsley, 5 finely chopped anchovies, 5 roughly chopped pitted green olives, 5 roughly chopped caperberries, the juice of 1 lemon, 1 tablespoon of avocado oil and seasoning.
