For the cupcakes
- 125 g butter, softened
- 125 g caster sugar
- 125 g cake flour
- 1 t vanilla extract
- 2 t baking powder
- 2 T milk For the icing
- 200 g plastic icing
- red food colouring
- 150 g butter, softened
- 300 g icing sugar
- 1 t vanilla extract
Method
IngredientsTo make the cupcakes: Preheat the oven to 180ºC.
Line a 12-muffi n pan with baking cups. In a food processor, thoroughly blend all the ingredients, except the milk. Slowly pour in the milk until the batter has a soft, spooning consistency. Spoon it into the baking cups.
Bake for 15 to 20 minutes, or until golden.
To make the icing and decorate: Colour the plastic icing with a few drops of food colouring and roll out. Using a cookie-cutter, cut out circles (the same size as the top of the cupcakes) and small hearts. Blend the remaining ingredients and spread onto half the cupcakes. Place the plastic-icing circles on the other half and decorate with the hearts and icing piping.
