  • 2 grapefruit
  • 50 g toasted cashews
  • 2 feta wheels
  • 2 avocados
  • 150 g baby spinach
  • Lemon juice
  • Olive oil

Method

Ingredients

1. Peel 2 grapefruit, then cut the flesh into segments.

2. Serve with 50 g toasted cashews, 2 wheels feta, 2 sliced ripe avocados and 150 g baby spinach.

3. Squeeze over lemon juice and drizzle with olive oil.
