The Lazy Makoti’s summer picnic

Summer’s here, which means it’s time to start thinking about picnic food! Mogau Seshoene, a.k.a. The Lazy Makoti, is sharing her delicious picnic menu – with the help of some gorgeous Country Road picnic accessories.

In a picnic salad bowl, combine 1 can of drained black beans, 1 can of drained chickpeas, 1 cup couscous (cooked), 1 small chopped red onion, a handful of cherry tomatoes, ½ cucumber (diced), ½ yellow sweet pepper (diced) and 1 round of feta (crumbled). Sprinkle with chopped fresh parsley. For the dressing, combine: 2 T honey with 1 T wholegrain mustard, ¼ cup of olive oil, the juice of 1 lemon, and salt and pepper to taste. Shake well and drizzle over the salad. (You can also do this at the picnic.)

For the savoury platter:

Choose a selection of savoury bites like samoosas, frikkadels, kebabs, and cheeses, and plate with fresh tomatoes and radish.

For the sparkling summer spritzer:

In a large jug, steep 3-4 bags of Crimson Citrus drink infusion with 1 litre of sparkling water. Add summer berries, fresh mint, slices of lime and ice. Pour into a cooler bottle to keep cool and further infuse. Pour out at the picnic as is, or top with Prosecco for further festivities.

For the dessert platter:

Choose a selection of your favourite sweet treats like brownies, eclairs, Swiss rolls and petit fours, and garnish with ripe summer berries and edible gold or silver glitter.
