3 time-saver meals to make this week
One magical ingredient can launch plethora of weeknight dinners. Here are even more ways to rethink the Woolies rotisserie chicken.
Family-friendly, flavoursome and ultra convenient, there’s a lot to love about a rotisserie chicken. Make yours go further with these 3 meal ideas – they’ll take you 40 minutes or less to put together.
Asian-style rotisserie chicken salad: 20 minutes
Combine 1/2 cup coconut cream, 2 t fish sauce, 4 t soya sauce and 4 t grated ginger and set aside to infuse. Cook 2 nests medium egg noodles. Slice 1 cucumber and twist the ribbons and the cooked noodles into bunches. Divide between 4 plates. Top with baby herbs, 2 sliced spring onions, 1 sliced mango and shredded rotisserie chicken. Spoon over the dressing and season to taste. Serves 4
Green chicken curry with mangetout, sugar snaps and apple-and-chilli sambal: 40 minutes
Fry 80 g Thai green curry paste in a large saucepan in 2 T canola oil for 1 minute. Add 1 x 400 ml can coconut milk and simmer for 15–20 minutes. Blend 1 T chopped coriander, the juice of 2 limes, 1 T brown sugar and 3–4 T water until smooth. Stir into the pan as you remove it from the heat, along with 140 g mangetout and 120 g sugar snap peas. Divide between bowls, top with shredded chicken, fresh mint and sprouts. Serve with the apple-and-chilli sambal and warm naan bread or rice. To make the sambal, dissolve 1 t caster sugar in 2 T rice wine vinegar. Add 1 halved and sliced green apple, 1 x 3 cm piece peeled and grated ginger and 3 sliced green chillies. Serves 4
Roast chicken and sweet onion relish pizza: 30 minutes
Preheat the oven to 200°C. Shred the rotisserie chicken and place onto 2 ready-made pizza bases. Drain 1 x 250 g tub bocconcini, then tear and dot onto the pizza bases. Place the pizzas on a baking tray and bake for 10 minutes, or until heated through. Remove from the oven and serve with sweet onion relish. Serves 2
