  • 160 g pack Beyond Nuggets™ Plant Based Crumbed Bites
  • 150 g tub Woolworths PlantLove™ Plain Cultured Coconut
  • 10 g fresh mint, roughly chopped
  • 10 g fresh coriander, roughly chopped, plus extra for garnish
  • 10 g fresh parsley, roughly chopped
  • 1 lime, zested and juiced
  • 2 T olive oil
  • sea salt and freshly ground black pepper, to taste
  • 1 cup Woolworths cooked baby beetroot, puréed
  • 180 g tub Woolworths hummus
  • 2 T Woolworths Asian chilli Szechuan pepper oil, for serving (optional)
  • ½ cup Woolworths PlantLove™ Tangy Mayonnaise
  • Woolworths mild mango atchar

Method

Ingredients

1. Air fry the Beyond Nuggets™ at 200°C for 10–12 minutes, or until slightly browned, cooked and crispy.

2. Mix the yoghurt and herbs, then add the lime zest and juice, olive oil and seasoning. Place in a small bowl.

3. Combine the beetroot and hummus in a small bowl and drizzle with the pepper oil.

4. Lastly, mix the mayonnaise and atchar and garnish with coriander.

5. Arrange the dips and soy bites on a platter and serve.
