A  very cool restaurant I follow on IG - @foundoyster - shared this dish, and I loved it so much that I made my own version, using Woolies’ crumbed chicken schnitzel and delicious ready-made Caesar dressing. Reading this recipe will be the only heavy lifting involved here!

Ingredients

  • 4 Woolworths chicken schnitzels (about 700 g)
  • 90 g Woolworths Italian salad leaves, washed
  • 2⁄3 cup Woolworths Caesar salad dressing
  • 100 g Woolworths hard cheese, finely grated
  • 6 anchovies
  • 30 g caperberries
  • 100 g Kalamata olives, pitted
  • 4 T olive oil
  • 4 free-range eggs, boiled and halved
  • a handful croutons
  • lemon wedges, for serving
  • sea salt and freshly ground black pepper, to taste

1. Preheat the oven to 200°C. Place the schnitzels on a lightly greased baking tray and bake for 20 minutes, or until cooked through and crisp.

2. Place the salad leaves in a bowl with the Caesar dressing, half the cheese, the anchovies, caperberries, olives and olive oil. Season and toss the salad so that the leaves are well coated with the dressing.

3. To serve, place the schnitzels on a large serving platter and top with the salad, boiled eggs and croutons. Squeeze over the lemon and cover with the remaining cheese. Drizzle with more dressing if desired. Serve immediately.
