- 500 g macaroni, cooked al dente
- 85 g Woolworths smoked salami sticks, chopped
- 150 g Woolworths Ayrshire pearl mozzarella
- 2½ cups Woolwortsh Grated Mature Cheddar Cheese
- 4 T Parmesan, finely grated
- 2 T Italian parsley, roughly chopped
- sea salt and freshly ground black pepper, to taste
- 3 cups plain double-cream yogurt
- 4 free-range eggs
- 100 g Woolworths Rosa tomatoes, sliced into thirds
Method
Ingredients
1. Preheat the oven to 180°C.
2. Combine the macaroni, salami sticks, cheese, herbs and seasoning in a large mixing bowl.
3. Mix the yoghurt and eggs in a separate bowl or jug. Stir through the pasta-and-cheese mixture.
4. Spoon into a silicone muffin tray, filling the cups halfway. Add a few slices of tomato and top with another spoonful of macaroni.
5. Bake for 12–15 minutes, or until slightly golden and set.
6. Serve with salad or chopped veggie sticks for an easy lunch, or freeze.
