SERVING SUGGESTION: Brown 1 packet Woolworths Angus stewing beef in 1 T canola oil, then remove from the pan. In the same pan, fry 3 halved onions and 3 sticks chopped celery in 1 T olive oil for 5 minutes. Add 3 T tomato paste, cook for 5 minutes, then deglaze the pan with 1 cup red wine and cook until reduced. Add 2 cups beef stock and 2 cans crushed tomatoes. Add 50 g butter and simmer for 5 hours until tender. Once tender, make the dumplings. Rub 50 g butter into 240 g self-raising flour, add 1 cup finely grated Parmesan, 3/4 cup milk and 1 t salt. Once a soft dough has formed, divide into equal sized portions, roll into balls and place on top of the stew. Steam for 10–15 minutes. Serve with freshly grated Parmesan and gremolata.
