Ingredients

Method
  • 200 g dried white beans (bom bom beans)
  • 2 onions, chopped
  • 2 carrots, chopped
  • 1 medium butternut, peeled and chopped, cut into small pieces
  • 2 potatoes, chopped
  • Vegetable oil
  • 1 t curry powder
  • 2 cups stock (optional) or water

Method

Ingredients
  1. Soak the beans in cold water overnight. Place in a pot, cover with water and bring to the boil. Simmer for 20 minutes, then put into a Wonderbag (see Cook’s note) to finish cooking.
  2. When the beans are cooked, fry the onions, carrots, butternut and potato until the onions have softened. Add the beans, curry powder and some water or stock, simmer for 15 minutes and serve.

Cook’s note: A Wonderbag is a non-electric, portable slow-cooker that cooks food that has been brought to the boil by conventional methods for up to 8 hours without the use of electricity or fuel. For more information, visit wonderbag.co.za.
