Method- 160 g pack Beyond Nuggets™ Plant Based Crumbed Bites
- 150 g tub Woolworths PlantLove™ Plain Cultured Coconut
- 10 g fresh mint, roughly chopped
- 10 g fresh coriander, roughly chopped, plus extra for garnish
- 10 g fresh parsley, roughly chopped
- 1 lime, zested and juiced
- 2 T olive oil
- sea salt and freshly ground black pepper, to taste
- 1 cup Woolworths cooked baby beetroot, puréed
- 180 g tub Woolworths hummus
- 2 T Woolworths Asian chilli Szechuan pepper oil, for serving (optional)
- ½ cup Woolworths PlantLove™ Tangy Mayonnaise
- Woolworths mild mango atchar
Method
Ingredients1. Air fry the Beyond Nuggets™ at 200°C for 10–12 minutes, or until slightly browned, cooked and crispy.
2. Mix the yoghurt and herbs, then add the lime zest and juice, olive oil and seasoning. Place in a small bowl.
3. Combine the beetroot and hummus in a small bowl and drizzle with the pepper oil.
4. Lastly, mix the mayonnaise and atchar and garnish with coriander.
5. Arrange the dips and soy bites on a platter and serve.
