Florida Pearl®️ Strawberry Victoria Sponge Cake
Ingredients
Method- 2 x 620 g Woolworths Easy To Bake vanilla cake mix
- 1 T Woolworths beetroot powder
- 250 ml whipping cream
- 3 T icing sugar, sifted plus extra for dusting
- 60 ml strawberry jam, warmed
- 250 g Florida Pearl® strawberries, quartered
- 150 g Flavourburst™ strawberries, quartered
- 4 g Freeze dried strawberries

1. Prepare vanilla cake mix according to packaging instructions. Add beetroot powder and bake according to packaging instructions. Set aside to cool.
2. Whip cream with icing sugar. Once stiff, spread on sponge and marble with strawberry jam
3. Top with sliced Florida Pearl® strawberries and top with the other sponge. Repeat the step
4. Top with whole and sliced Florida Pearl® strawberries and Flavourburst™ strawberries. Dust with icing sugar and crushed dehydrated strawberries. If you’re feeling fancy, add some flower petals.
Cook's note: Option to turn the recipe into cupcakes. Use Woolworths vanilla cupcake mix, bake, hollow out the middle of the cupcakes and fill them with jam. Pipe with frosting and decorate with Florida Pearl® Strawberries.
