  • 125 g Woolworths chilli and lime butter
  • 500 g Woolworths freshly frozen uncooked and peeled large prawns, thawed
  • 500 g Woolworths fresh hake fillets
  • 1 red onion, finely chopped
  • 1 garlic bulb, halved
  • 10 g tomato paste
  • 1 x 90 g jar Woolworths roasted cherry tomatoes
  • 1 x 400 g can Woolworths diced tomatoes
  • 2 cups seafood broth (optional) *substitute for water or vegetable stock
  • 250 g Woolworths frozen battered onion rings, air fried until crispy
  • 1 x 120 g jar Woolworths aioli
  • 5 g Italian parsley, roughly chopped

Method

Ingredients

1. Heat half the Woolworths Chilli and Lime Butter in a large pan over high heat. Toss the prawns through the pan for 5 minutes, or until cooked. Remove from the pan and set aside.

2. Add another knob of butter to the pan and cook the hake fillets for 5 – 8 minutes, or until cooked, flipping halfway through. Season.

3. Add the onion, garlic and tomato paste. Saute over low heat for about 10 minutes, adding a little fat or water if needed.

4. Add the Woolworths Roasted Cherry Tomatoes, tinned diced tomatoes and stock. Leave to bubble for 15 – 20 minutes.

5. Return the seafood to the pan and heat through. Add another teaspoon of butter to the sauce. Serve with Woolworths Battered Onion Rings, Woolworths aioli and freshly chopped parsley.
