Ingredients

Method
  • 1.2 kg Woolworths free-range deboned leg of lamb steaks
  • sea salt and freshly ground black pepper, to taste
  • 2 T olive oil
  • 2 Woolworths baguettes
  • 160 g Woolworths South African feta-and-herb dip
  • 30 g fresh wild rocket
  • 1 cucumber, sliced
  • 245 g Woolworths pickled peppers
  • 100 g Woolworths exotic tomatoes, sliced
  • 90 g Woolworths pickled red onion petals
  • fresh mint, to garnish

1. Generously season the steaks. Sear in a hot pan, then grill according to package instructions until cooked to your liking. Set aside to rest.

2. Slice the baguettes in half lengthways and brush the cut sides with olive oil. Heat in the oven or on the braai until golden brown. Spread with the feta-and-herb dip.

3. Top with the rocket, cucumber, pickled peppers, tomatoes and sliced steak. Garnish with pickled red onions and fresh mint.

4. Cut the baguettes into 3 pieces and wrap in wax paper to enjoy as part of a picnic, or serve immediately.
