Potato-topped focaccia
Meet the affordable and easy-to-make addition to your next meal: focaccia, crusted in Maldon®️ sea salt flakes and chopped rosemary. This simple recipe takes Woolies’ easy-to-bake mix to the next level (in seconds) with just a few key ingredients. Hello, herby-salted goodness!
Ingredients
Method- 1 kg Woolworths Easy to Bake focaccia mix
- ¼ cup olive oil, for drizzling
- 2 Woolworths Nicola potatoes, thinly sliced
- 2 Woolworths Abby potatoes, thinly sliced
- 1 T Maldon®️ sea salt flakes
- 2 t fresh rosemary, finely chopped
- 1 cloves garlic, finely chopped
- 1 lemon, zested
- Parmesan, grated (optional)
Method
Ingredients1. Prepare the focaccia dough according to package instructions.
2. Grease a large baking tray with olive oil and place the dough into the tray, gently pushing it into the corners.
3. Make dimples in the dough using your fingertips, then drizzle with olive oil. Arrange the potatoes on the dough.
4. Mix the salt with the rosemary, garlic and lemon zest. Sprinkle the rosemary salt and Parmesan over the potatoes. Bake for 25 minutes until focaccia is baked and potatoes are crispy.
Cook's note: Serve with fresh basil, olive oil, and balsamic vinegar for dipping.
