Rooibos chai caramel cupcakes

Ingredients

Method
    For the cupcakes:

  • 680 g box Woolworths Easy To Bake vanilla cupcake mix
  • 2 eggs
  • ½ cup oil
  • 4 Woolworths rooibos chai tea bags
  • ½ cup milk
  • 50 g Nestlé® caramel treat™
  • For the icing:

  • 3 T milk
  • 2 Woolworths cinnamon tea bags
  • 100 g butter

1. Preheat oven to 170ºC.
2. To make the cupcakes, follow the instructions on the box. Infuse the milk for the cupcake mixture with rooibos chai tea bags.
3. Bake in a preheated oven for 15 – 20 minutes, or until golden and cooked through.  Allow to cool.
4. To make the icing, infuse milk with cinnamon tea. Cream the butter until pale and fluffy, and add the icing sugar from the box mix to the cinnamon-infused tea until well combined. Place into a piping bag.
5. Using the back of a butter knife, make a small hole in the top of the cupcake and fill it with caramel. Pipe cinnamon buttercream on top and enjoy.
