Spicy tomato granita

This spicy tomato granita makes a refreshing summer appetiser. It's reminiscent of a Bloody Mary in frozen form.

- 4 T vodka
- 3 cups tomato juice
- 1 chilli, chopped
- 1 cucumber
- 2 sticks celery
- 12 cherry tomatoes, to garnish
- Freshly ground black pepper, to serve
Method
Ingredients
1. Mix together the vodka, lemon juice, tomato juice and chilli, and pour into a plastic container. Place in the freezer and leave until frozen. Stir the mixture from time to time until it has a coarse, grainy texture.
2. Using a vegetable peeler, peel the length of the cucumber and celery sticks to form ribbons. Place in iced water and leave to curl.
3. Place the ribbons in a glass then spoon over the tomato granita. Garnish with a few leftover cucumber ribbons, cherry tomatoes and lemon wedges, and a grinding of black pepper.
Cook’s note: To make a cucumber bow, tie the cucumber ribbon as you would a fabric or paper ribbon.
