Ingredients

Method
  • 125 g white sugar
  • 10 g fresh ginger, grated
  • 20 g lemongrass paste
  • 2 limes, juiced, rind reserved
  • ½ cup Woolworths tamarind & date chutney
  • ¾ cup water
  • alcohol of choice, for serving
  • soda water, for serving

1. Place the sugar, ginger, lemongrass paste, lime juice, tamarind and date chutney and water in a small saucepan. Bring to a simmer, and cook over low heat until it becomes fragrant about 15–20 minutes. Strain the mixture into a glass jug and let it cool for at least 30 minutes; this will also help it thicken.

2. To serve, divide the syrup between 6 glasses, add a tot of your favourite alcoholic beverage to each, top up with soda water, and garnish with a piece of lime rind.
