For the dressing:
- 2 yellow peppers
- ¾ cups olive oil
- sea salt and freshly ground black pepper, to taste For the yellow watermelon salad:
- 1 Woolworths half yellow watermelon, sliced into wedges and cubes
- 150 g Woolworths exotic tomatoes
- 2 x 100 g Woolworths chevin goat’s cheese
- 5 g Woolworths edible flowers
- 10 g fresh dill, roughly chopped
- 10 g fresh mint, roughly chopped
- 10 g fresh Italian parsley, roughly chopped
- 20 g pine nuts, lightly toasted
- sea salt and freshly ground black pepper, to taste
Method
Ingredients1. To make the dressing, char the peppers until blackened over a gas flame or under the oven’s grill. Place in a bowl, cover with cling wrap and allow to steam for 5 minutes. Peel and seed the peppers, then place in a blender with the olive oil. Blend until smooth, then pass through muslin cloth or a fine sieve. Season and set aside.
2. To assemble the salad, place the watermelon and tomatoes on a platter. Roll the goat's cheese in the chopped flowers and herbs. Place on the platter and drizzle over the dressing. Top with the pine nuts.
